Lemon Cake with Greek Yogurt
· 1 1/2 cups plain flour
· 2 teaspoons baking powder
· 1/2 cup oliveoil 1/2 teaspoon salt
· 1 cup Greek yogurt
· 1 1/3 cups sugar
· 3 big eggs
· zest & juice from 2 lemons
· 1/2 teaspoon vanilla extract
1. Preheat oven to 350 degrees. Grease a loaf pan. Combine all ingredients except the flour and mix well.Add the flour and combine with the rest ingredients with gentle moves, so the air is kept in, to let the cake rise.
2. Pour into loaf pan. Bake at 350 degrees for 50 to 60 minutes, or until cake passes toothpick test. Let cool completely before slicing.
